  1. 1 Preheat oven to 180C, grease two 20cm round tins
  2. 2 Beat butter and sugar until pale and fluffy
  3. 3 Add eggs one at a time, beating well
  4. 4 Fold in flour gently until just combined
  5. 5 Divide between tins, smooth tops
  6. 6 Bake 22-25 mins until risen and springs back when pressed
  7. 7 Cool completely on wire racks
  8. 8 Whip cream to soft peaks
  9. 9 Spread one sponge with jam then cream
  10. 10 Sandwich together, dust with icing sugar
