  1. 1 Preheat oven to 210C and line a baking tray
  2. 2 Rub cold butter into flour and salt until breadcrumb consistency
  3. 3 Stir in 80g cheese chives and mustard powder
  4. 4 Make a well and add milk mixing quickly with a fork
  5. 5 Turn onto floured surface and press to 3cm thick
  6. 6 Cut into 8 rounds or squares
  7. 7 Brush with beaten egg and top with remaining cheese
  8. 8 Bake 14-16 mins until risen and deep golden
  9. 9 Best served warm
