  1. 1 Soak noodles in hot water 8 mins, drain
  2. 2 Mix tamarind, fish sauce, and sugar for sauce
  3. 3 Press tofu dry, cut into cubes
  4. 4 Fry tofu in oil over high heat until golden, remove
  5. 5 Add more oil, scramble eggs
  6. 6 Add noodles and sauce, toss constantly over high heat
  7. 7 Return tofu, add beansprouts and spring onions
  8. 8 Toss 1-2 mins
  9. 9 Serve with crushed peanuts and lime wedges
