  1. 1 Preheat oven to 190C
  2. 2 Cook pasta until just al dente, drain
  3. 3 Fry garlic in oil 1 min, add tomatoes and basil, simmer 10 mins
  4. 4 Wilt spinach in a pan, squeeze out excess water
  5. 5 Mix spinach into ricotta
  6. 6 Combine pasta with most of the tomato sauce
  7. 7 Spoon into baking dish
  8. 8 Dot ricotta mixture over pasta
  9. 9 Pour remaining sauce, top with mozzarella and parmesan
  10. 10 Bake 20-25 mins until bubbling and golden
