  1. 1 Preheat oven to 220C
  2. 2 Cut cauliflower into florets, toss with oil and cumin
  3. 3 Roast 20-25 mins until charred at edges
  4. 4 Meanwhile fry onion 5 mins
  5. 5 Add garlic, garam masala, and turmeric, cook 2 mins
  6. 6 Add tomatoes and coconut milk, simmer 10 mins
  7. 7 Add roasted cauliflower to the sauce
  8. 8 Stir gently to coat
  9. 9 Cook rice
  10. 10 Serve curry over rice
