  1. 1 Preheat oven to 200C
  2. 2 Slice courgette and red onion, halve tomatoes
  3. 3 Toss vegetables with oil, garlic, herbs, salt and pepper
  4. 4 Spread on roasting tray, roast 10 mins
  5. 5 Nestle salmon fillets among the veg
  6. 6 Season salmon with salt, pepper, lemon juice
  7. 7 Roast 12-15 mins until salmon is just cooked through
  8. 8 Squeeze more lemon over and serve
