  1. 1 Keep stock warm in a separate pan
  2. 2 Slice mushrooms, fry in butter until golden, set aside
  3. 3 Soften onion in same pan 5 mins
  4. 4 Add garlic and rice, stir 2 mins
  5. 5 Add wine and stir until absorbed
  6. 6 Add stock one ladle at a time, stirring constantly
  7. 7 After 18-20 mins rice should be creamy and al dente
  8. 8 Stir in mushrooms and spinach
  9. 9 Remove from heat, stir in parmesan and extra butter
  10. 10 Season and serve immediately
