  1. 1 Slice mushrooms, fry in butter until golden, set aside
  2. 2 Soften onion in same pan 5 mins
  3. 3 Add garlic and rice, stir 2 mins
  4. 4 Add wine, stir until absorbed
  5. 5 Add stock one ladle at a time, stirring constantly
  6. 6 After 18 mins rice should be creamy and al dente
  7. 7 Stir in mushrooms and their juices
  8. 8 Remove from heat, stir in parmesan
  9. 9 Season and serve with extra parmesan
