  1. 1 Peel and thinly slice potatoes and onion
  2. 2 Heat oil in a 24cm pan over medium heat
  3. 3 Gently cook potato and onion together 15-18 mins until tender but not browned
  4. 4 Beat eggs with salt
  5. 5 Remove excess oil from pan (save it)
  6. 6 Pour egg mixture over potatoes
  7. 7 Cook 5 mins until edges set
  8. 8 Flip onto a plate, slide back into pan
  9. 9 Cook 3-4 mins until just set in the centre
  10. 10 Rest 5 mins, slice like a cake
