  2. 2 Chop veg into chunks, toss with olive oil, salt and pepper
  3. 3 Roast on baking tray 20-25 mins until caramelised
  4. 4 Cook quinoa per packet, fluff with fork
  5. 5 Dress quinoa with lemon juice and olive oil
  6. 6 Serve quinoa in bowls topped with roasted veg
  7. 7 Add a spoonful of hummus to each bowl
