  1. 1 Dice all vegetables
  2. 2 Trim and dice lamb into small pieces
  3. 3 Brown lamb in pot over high heat
  4. 4 Add all veg garlic barley stock bay leaves and thyme
  5. 5 Bring to boil skim any foam
  6. 6 Reduce heat and simmer 1 hour until lamb and barley tender
  7. 7 Remove bay leaves
  8. 8 Season generously
  9. 9 Scatter parsley and serve
