  1. 1 Heat olive oil in a pan, add minced garlic and cumin
  2. 2 Add drained chickpeas, cook 5 mins until golden
  3. 3 Make dressing: whisk tahini, lemon juice, 2 tbsp water
  4. 4 Toss warm chickpeas with spinach (it will wilt slightly)
  5. 5 Pour over tahini dressing
  6. 6 Season and serve warm or at room temperature
