  2. 2 Halve squash, brush with oil, roast cut-side down 25 mins until soft
  3. 3 Scoop out flesh
  4. 4 Soften onion and garlic in a pot
  5. 5 Add squash flesh, ginger, and stock
  6. 6 Simmer 10 mins then blend until silky smooth
  7. 7 Stir in coconut milk, reheat gently
  8. 8 Season and serve with a swirl of extra coconut milk
