1 Cut beef into 2cm cubes
2 Brown beef in oil in batches set aside
3 Soften onion celery and carrot 5 mins
4 Add garlic and thyme
5 Return beef with stock and tomatoes
6 Bring to boil simmer 30 mins
7 Add potato and parsnip
8 Cook further 25 mins until veg and beef tender
9 Season well and serve with bread
